As far as I know, none of it is canon. I invented McGinty's bar as a cop hangout, and I knew I wanted Dee and Ryo to take it over eventually. Terence named Dee because he knew how passionate he was about the bar and how important it was to him. Ryo's not so much of a drinker; he'll help Dee with te financial side of things, but Dee knows what the place should be and will keep it honest.
